Bridal Health: Wedding Diet: Scrambled eggs on toast with a twist

Fancy a healthier option than the usual stodgy white bread smothered with butter? Why not give this version of a classic breakfast dish a try?

- one slice of Rye bread 
- 2 eggs
- a splash of milk
- 5 cherry tomatoes
- handful of basil 
- salt and pepper

1. Toast your rye bread on the grill or in your toaster 
2. I tend to make my scrambled eggs on the microwave as it's quick and there is minimal tidying up to be done! Crack two eggs into a glass jug and add a splash of milk and your seasoning. Give it a good whisk before cooking on full power for 1 minute.
3) chop your cherry tomatoes in half and add into the jug. Give the eggs a good stir and cook for another 30 seconds-1 minute depending on how you prefer your eggs.
4) serve the eggs on your toast and sprinkle with the basil!
