Bridal Health: Wedding Diet: Four Fab n Fresh Salads

Salads can sometimes be a bit of a bore so here are a few ways to make your salads a bit more interesting! 

Mozzarella, pesto and tomato salad

- mozerella (2 packs)
- fresh basil
- 2 salad tomatoes
- 1 jar of green pesto 

1) slice the mozerella into slices around 1/2 cm thick 
2) slice the salad tomatoes and mix with a handful of fresh basil
3) dress mozzarella with the pesto - around 1tbsp in total

Shredded cucumber and spring onion salad 

- 1 pack of spring onions
- 10cm length of cucumber
- 1 tsp of balsamic vinegar 

Cut the cucumber and spring onions finely lengthwise. Stack on a plate and drizzle with your balsamic vinegar!

Smokey egg salad

- 3 hard boiled eggs
- low fat mayonnaise 
- paprika 

Slice the boiled eggs and arrange in q circular fashion as shown above. Take a couple of generous dollops of a low fat mayo and place this in the centre. Sprinkle with paprika for a yummy smokey flavour.

Tomato, garlic and basil salad 

- tomatoes - mixed varieties (cherry, salad, plum)
- fresh basil
- 1 clove of garlic - finely grated
- 1 tsp of balsamic vinegar
- a drizzle of olive oil 

(If you want to make this salad a little more interesting you can add in things like fresh chopped chillis, anchovies or olives!)

1) chop the tomatoes into different sizes 
2) add the basil and fresh garlic
3) drizzle the salad with the balsamic vinegar and oil and mix well

I like to leave this dish in the fridge for a couple of hours to let the flavours come to life!
